    The Guajillo pepper is known to be on the sweet side of spice.  It has a Scoville unit of only 2500-5000 which makes it 3 times milder than jalapeno peppers.  These are often found dried and used in traditional dishes.  Finding them fresh is a rare thing indeed. This pepper is the second most popular in Mexico.  This pepper is used in Mexican Mole Sauce and Harissa Chili Paste.   This is a 75-day heirloom pepper.  The pods are between 3 and 5 inches long.

The meat is thick and flavorful. The plants get a kind of large and can put out lots and lots of peppers at once.  The peppers will mature red and often get 6 to 8 inches in length. The Scoville is a manageable 14,000 to 30,000.
